Thanksgiving falls on November 26 this year, and the oven is always the bottleneck. The secret to a calm day is choosing side dishes that can be prepared one to two days ahead. Here are reliable options and how to store each one.

1. Mashed Potatoes
Boil peeled potatoes until tender, mash with butter, warm milk or cream, and salt. Cool, refrigerate in a covered dish, and reheat in a slow cooker or in the oven with a splash of milk, stirring halfway.

2. Cranberry Sauce
Simmer fresh cranberries with sugar, orange juice and a strip of orange peel for about 10 minutes until the berries burst. It thickens as it cools and keeps in the fridge for several days. Serve cold or at room temperature.

3. Green Bean Casserole
Prepare the filling and sauce a day ahead and keep it covered in the fridge. Add the crispy onion topping just before baking so it stays crunchy.

4. Stuffing (Dressing)
Cube and dry the bread a day or two ahead. Cook the onion, celery and herbs, mix with stock, and assemble the dish. Cover and refrigerate, then bake on the day. Make sure the center reaches a safe temperature of 74°C (165°F).

5. Roasted Root Vegetables
Peel and chop carrots, parsnips and sweet potatoes the day before and store them in water or a sealed container. On the day, toss with oil and roast until golden.

6. Sweet Potato Casserole
Bake or boil the sweet potatoes, mash with butter, a little sugar and spices, and spread into a baking dish. Add the topping and bake on the day.

7. Gravy
Make a base gravy from stock, butter and flour up to two days ahead, then whisk in turkey drippings on the day for flavor.

8. Dinner Rolls
Many dough recipes can be shaped, covered and refrigerated overnight. Let them rise at room temperature, then bake. You can also bake them a day ahead and warm them in foil.

9. Autumn Salad
Wash and dry the greens, and prepare the dressing in a jar. Store the toppings separately and combine just before serving.

Make-ahead tips

- Write a timeline. Work backward from your serving time and note when each dish goes into the oven.
- Free up oven space by using the slow cooker, the stovetop and the microwave for reheating.
- Label containers with the dish name and reheating instructions, so that helpers can take over.
- Cool food quickly. Do not leave cooked dishes at room temperature for more than two hours.
- Reheat thoroughly. Leftovers and make-ahead dishes should be reheated until steaming hot.

Storage at a glance

Most of these dishes keep well in the fridge for one to two days. Cranberry sauce lasts longer. Always keep cooked food covered and cold.

Final tip

Choose two or three dishes to make completely ahead, and keep the others simple. A smaller, well-organized menu usually tastes better and leaves you free to enjoy the day.

Easy Thanksgiving Side Dishes You Can Make Ahead

A slow cooker lets you do the work in the morning and enjoy a hot dinner in the evening. These recipes use common ingredients and need only about 15 minutes of prep. Each serves about four to six people, and cooking times can vary by model, so check your manufacturer's instructions.

1. Slow Cooker Chicken Chili

Combine 500g (about 1 pound) of boneless chicken breasts or thighs, one chopped onion, two cloves of garlic, a can of diced tomatoes, two cans of beans (drained), a cup of corn, 2 cups of chicken stock and 2 tablespoons of chili spices. Cook on low for 6 to 8 hours. Shred the chicken with two forks before serving, and top with cheese, yogurt or herbs.

2. Beef Stew

Toss 700g (about 1.5 pounds) of beef chuck cubes in a little flour, and place in the slow cooker with chopped carrots, potatoes, onion, garlic, 2 cups of beef stock, a spoonful of tomato paste and a few herbs. Cook on low for 8 hours until the beef is tender.

3. Pulled Pork

Rub a 1kg (about 2-pound) pork shoulder with salt, pepper, paprika and garlic powder. Place it on sliced onions, add half a cup of stock or apple juice, and cook on low for 8 to 10 hours. Shred and mix with barbecue sauce. Serve in buns or with rice.

4. Lentil and Vegetable Curry

Combine a cup of rinsed red or brown lentils, a chopped onion, two carrots, a can of coconut milk, a can of tomatoes, 2 cups of stock and 1 to 2 tablespoons of curry powder. Cook on low for 6 to 7 hours. Stir in spinach in the last 10 minutes and serve with rice or bread.

5. Creamy Potato Soup

Put 6 diced potatoes, one onion, 2 cloves of garlic and 4 cups of stock in the slow cooker. Cook on low for 6 to 8 hours. Mash some of the potatoes directly in the pot, and stir in a cup of milk or cream and a handful of cheese at the end.

6. Honey Garlic Chicken Thighs

Place chicken thighs in the slow cooker with a sauce of 1/3 cup honey, 1/3 cup soy sauce, 4 cloves of minced garlic and a tablespoon of ketchup. Cook on low for 5 to 6 hours. Thicken the sauce on the stovetop if you wish, and serve with rice and steamed vegetables.

7. Vegetarian Chickpea Stew

Combine two cans of chickpeas, a can of tomatoes, a diced sweet potato, an onion, garlic, a teaspoon each of cumin and paprika, and 2 cups of vegetable stock. Cook on low for 6 hours. Add spinach at the end and squeeze in some lemon juice.

Tips for better slow cooker meals

- Do not lift the lid often. Each time you do, you lose heat and add cooking time.
- Brown meat first if you have time. It adds flavor but is optional.
- Cut vegetables evenly, and put the hard ones, like carrots and potatoes, near the bottom.
- Add dairy, fresh herbs and delicate vegetables near the end to avoid curdling or overcooking.
- Do not overfill. Aim for between half and two-thirds full.
- Thaw meat before cooking it, since frozen meat can stay too long in unsafe temperature ranges.

Food safety

Cook chicken to an internal temperature of 74°C (165°F). Refrigerate leftovers within two hours, and reheat them until steaming hot. Do not use a slow cooker to reheat leftovers from cold unless the manufacturer says it is safe. Use the stove or microwave instead.

Make it a routine

Prepare ingredients the night before, such as chopping vegetables and storing them in the fridge. In the morning, add everything to the pot, switch it on and head out. Dinner will be waiting.

Easy Slow Cooker Recipes for Busy Weeknights

Sunday meal prep sounds great in theory: spend a few hours in the kitchen, prepare everything for the week, and never worry about dinner again. In reality, many people start with ambitious plans and end up spending most of the day cooking. The good news is that meal prep doesn't have to mean cooking seven identical meals. A more realistic approach is to prepare a few flexible ingredients that can be mixed and matched throughout the week. You might cook a batch of rice, roast some vegetables, prepare chicken or beans, make a simple sauce, and wash some fresh produce. Those ingredients can then become bowls, salads, wraps, sandwiches, or quick dinners. The goal isn't perfection. The goal is to make your weekdays easier.
Start With a Simple Plan
Before you turn on the oven, spend 10–15 minutes deciding what you actually need.Think about your schedule for the coming week. How many lunches will you eat at home? Which evenings will be busy? Will you have time to cook on Wednesday or Thursday?Instead of planning every meal in detail, choose two or three main meal combinations. For example:

Chicken, rice, and roasted vegetables

Chickpea and vegetable wraps

Pasta with roasted vegetables and a simple sauce

Overnight oats or yogurt for breakfast

Fresh fruit and nuts for snacks

Planning before shopping can help prevent buying ingredients that never get used. Cleveland Clinic also recommends choosing a consistent prep day and making a game plan before starting. (Cleveland Clinic)
Think in Components, Not Complete Meals
One of the biggest mistakes beginners make is preparing five or six identical containers of food. That can become boring quickly.Instead, prepare components. For example, on Sunday you could prepare:Protein: grilled chicken, eggs, beans, or tofuCarbohydrate: rice, potatoes, pasta, or quinoaVegetables: broccoli, carrots, peppers, zucchini, or green beansFresh ingredients: salad greens, tomatoes, cucumber, herbsSauce: yogurt dressing, salsa, pesto, or another favorite sauceDuring the week, combine these ingredients in different ways.Monday might be a chicken and rice bowl. Tuesday could be a wrap using the same chicken and vegetables. Wednesday could become a salad. This gives you variety without requiring completely different recipes every day.
Don't Try to Cook Everything
A realistic meal-prep session doesn't need to involve every meal of the week.Choose foods that actually benefit from being prepared ahead of time.Rice, roasted vegetables, cooked beans, soups, sauces, boiled eggs, and some proteins can be useful building blocks.Other foods are better prepared closer to when you eat them. Fresh salads, avocado, crispy toppings, and some fruits can lose their texture when stored for too long. This is why a combination of batch cooking and small midweek preparation can work better than trying to prepare everything on Sunday.
Create a Simple Sunday Timeline
You don't need to spend your entire Sunday in the kitchen.Try dividing your preparation into stages.
1. Prepare the kitchen
Clean your workspace and take out your cutting boards, knives, pans, storage containers, and other equipment.
2. Start the longest cooking tasks
Put rice, potatoes, roasted vegetables, or other foods that take longer to cook on first.
3. Chop vegetables
While something is cooking, wash and chop vegetables.
4. Prepare your protein
Cook your chicken, tofu, beans, eggs, or another protein source.
5. Make one or two sauces
A simple sauce can make the same ingredients taste completely different during the week.
6. Cool and organize
Once the food is ready, allow appropriate foods to cool and transfer them into clean storage containers.Working on several tasks at the same time can make your prep session much more efficient.
Choose the Right Containers
Good storage containers make meal prep much easier.Glass containers are useful because many are designed for refrigerator, freezer, or microwave use, depending on the specific product. Whatever container you choose, check the manufacturer's instructions for temperature and appliance compatibility. (Healthline)You don't need 20 identical containers.Start with a small collection of containers in different sizes. Smaller containers are particularly useful for sauces, dressings, snacks, and toppings.Clear containers can also make it easier to see what you have available in the refrigerator.
Label Everything
Labels may seem unnecessary, but they can make a surprisingly big difference.Write the name of the food and the date it was prepared. If you're freezing something, add the date before putting it in the freezer. This prevents the classic situation where you open the refrigerator and wonder, “When did I make this?”Keeping similar meals together can also make weekday mornings easier. You should be able to open the refrigerator and immediately see what's available.
Keep Sauces Separate
Nobody likes a soggy salad. If you're preparing salads, wraps, or meals with crispy ingredients, store sauces and dressings separately whenever possible.Add the dressing shortly before eating instead of mixing it into the entire container on Sunday. The same idea works for crunchy toppings, fresh herbs, nuts, seeds, and other ingredients that can lose their texture when stored with moist foods.Cleveland Clinic specifically recommends keeping sauces and dressings in smaller containers to help prevent ingredients such as salads from becoming soggy. (Cleveland Clinic)
Use Your Freezer
The freezer can make your meal-prep routine much more flexible. If you've prepared more food than you expect to eat within the refrigerator-storage window, consider freezing suitable portions instead of letting them sit in the refrigerator all week.Soups, stews, sauces, cooked grains, and some prepared meals can work particularly well for freezing.Remember to use freezer-safe containers and follow appropriate food-storage practices.
Don't Aim for Seven Perfect Days
This may be the most important rule of realistic meal prep.Your week probably won't go exactly according to plan.Maybe you have lunch with a colleague on Tuesday. Perhaps you're too tired to cook on Wednesday. Maybe Friday becomes pizza night. That's completely fine.Meal prep should make your life easier, not create another obligation.Instead of thinking, “I must eat everything I prepared,” think of your Sunday cooking as creating options. You've already done some of the work. Now you can adjust your meals according to your schedule and appetite.
A Simple Beginner Meal-Prep Example
Here's an easy starting point:Breakfast: overnight oats + fruitLunch: chicken or chickpea rice bowlsDinner: roasted vegetables + protein + grainSnacks: fruit, yogurt, nuts, or cut vegetablesFor the main meal, prepare:

One protein

One grain or starch

Two vegetables

One sauce

A few fresh toppings

That's enough to create several different meals without turning Sunday into an all-day cooking project.
Final Thoughts
Sunday meal prep doesn't need to look perfect or Instagram-worthy.The most useful system is the one you can actually maintain.Start small. Prepare a few versatile ingredients, store them properly, keep sauces separate, label your containers, and leave yourself enough flexibility to change your plans during the week.Once you find a routine that works, you can gradually add more recipes and preparation techniques. The ultimate goal isn't to have a refrigerator full of identical containers. It's to make Monday morning easier, busy weeknights less stressful, and good food more convenient.

A Realistic Guide to Sunday Meal Prep

There are some dinners that seem to make an ordinary evening feel a little more comfortable. A warm bowl of chicken stew is one of them. When you're tired after a busy day, the last thing you may want is a complicated recipe that leaves you with a sink full of dishes. That's where a one-pot chicken stew comes in.With tender chicken, hearty potatoes, sweet carrots, onions, herbs, and a flavorful broth, this is the kind of meal that feels homemade without requiring an entire evening in the kitchen. The one-pot approach also keeps cleanup simple, making it especially useful for busy weeknights.
Why One-Pot Meals Work So Well
One-pot meals are popular for a simple reason: they're convenient.Instead of cooking the chicken, vegetables, and sauce separately, everything comes together in the same pot. That means fewer dishes and, more importantly, an opportunity for the ingredients to build flavor together. For a stew, this is particularly useful because the vegetables and chicken simmer in the same flavorful liquid. The result is a hearty meal that can be served on its own or alongside something simple like crusty bread.
What You'll Need
You don't need a long list of unusual ingredients. For a simple chicken stew, gather:

Chicken thighs or chicken breast

Potatoes

Carrots

Onion

Garlic

Celery, if desired

Chicken broth

Olive oil or another cooking oil

Dried or fresh thyme

Salt and black pepper

A little flour or another thickener, if desired

Fresh parsley for serving

One of the advantages of stew is its flexibility. You can adjust the vegetables based on what you already have in your kitchen.Carrots, celery, peas, mushrooms, green beans, and other vegetables can all work well in different versions of chicken stew.
Start With the Chicken
The first step is to prepare the chicken.Chicken thighs are particularly well suited to stew because they tend to remain juicy during simmering, although chicken breast can also be used.Cut the chicken into reasonably sized pieces if necessary and season it with salt and pepper.Heat a little oil in a large heavy pot or Dutch oven.Add the chicken and cook until the outside develops some color. You don't necessarily need to cook the chicken completely through at this stage. The purpose of this first step is to develop flavor and give the chicken some browning before it finishes cooking in the stew.Once browned, transfer the chicken to a plate and set it aside temporarily.
Build the Flavor Base
Now it's time to work on the vegetables.Add chopped onion to the same pot.Cook it until it begins to soften, then add garlic. If you're using celery, this is a good time to add it as well.Stir everything together and let the vegetables cook for a few minutes. This step may seem small, but it's important. The vegetables pick up some of the flavorful browned bits left behind by the chicken.Add your herbs, such as thyme, along with a little black pepper.
Add the Potatoes and Carrots
Next, add the vegetables that will make the stew hearty.Cut potatoes and carrots into reasonably even pieces.Try to keep the pieces similar in size so they cook at roughly the same rate.Add them to the pot and stir them together with the onions, garlic, and herbs. At this point, the kitchen should already start smelling like a proper comfort-food dinner.
Add the Broth
Pour in your chicken broth. The liquid should surround the ingredients without necessarily completely drowning everything.Return the browned chicken to the pot and bring the mixture to a gentle simmer. This is where the magic of a stew really begins. As the chicken and vegetables cook, their flavors blend into the broth.
Let Everything Simmer
Reduce the heat and allow the stew to simmer gently. The exact cooking time depends on the size of your chicken pieces and vegetables, as well as the type of chicken you're using. The potatoes should become tender, the carrots should soften, and the chicken should reach a safe internal temperature.Avoid boiling the stew aggressively.A gentle simmer is usually better for maintaining a pleasant texture and allowing the flavors to develop gradually. While it cooks, you can use the time to prepare a simple salad, set the table, or simply relax. That's one of the best things about a one-pot dinner.Once the ingredients are in the pot, there's relatively little active work.
How to Make the Stew Thicker
Some people prefer a brothier stew, while others like a thicker, gravy-like consistency. If you want a thicker stew, there are several approaches. You can use a small amount of flour or another suitable thickener.Another simple method is to allow the stew to simmer uncovered for a little longer so some of the liquid evaporates. You can also mash a few pieces of cooked potato directly into the broth. This can naturally increase the thickness while keeping the potato flavor in the dish. The choice is yours.
Taste Before Serving
Before serving, taste the broth. This is your opportunity to adjust the seasoning. You may want a little more:

Salt

Black pepper

Thyme

Garlic

Fresh parsley

Don't add everything automatically.Taste first, then adjust.A small amount of fresh parsley added at the end can provide a bright contrast to the rich stew.
Serve It With Something Simple
A hearty chicken stew doesn't need an elaborate side dish.A few good options include:Crusty bread — perfect for soaking up the broth.Simple green salad — adds a fresh contrast.Dinner rolls — an easy family-friendly option.Steamed vegetables — useful if you want to add even more vegetables to the meal. You can also simply serve the stew by itself. With chicken, potatoes, carrots, and broth already in the bowl, it's satisfying enough to stand alone.
Make It Ahead
One of the biggest advantages of chicken stew is that it can work well as a make-ahead meal.Prepare the stew earlier in the day and gently reheat it when you're ready to eat.The flavors can become even more integrated as the dish rests. If you're preparing leftovers, cool and store them properly according to standard food-safety practices, and reheat thoroughly before serving. For longer storage, follow appropriate food-safety guidance for refrigeration or freezing.
Easy Ways to Change the Recipe
Once you've mastered the basic recipe, it's easy to create different versions.
Add Mushrooms
Mushrooms can provide a savory, earthy flavor and work especially well with chicken and thyme.
Add Peas
Stir in peas toward the end of cooking for a little color and sweetness.
Add Green Beans
Green beans can provide another texture and make the stew feel even more vegetable-packed.
Make It Creamy
For a richer variation, you can incorporate a suitable creamy ingredient near the end of cooking.
Add More Herbs
Rosemary, parsley, thyme, or other herbs can change the character of the stew. The basic method stays the same.
Tips for Better One-Pot Chicken Stew

Don't Crowd the Chicken
If you're browning a large amount of chicken, work in batches if necessary.Giving the pieces enough room helps them brown instead of simply steaming.
Cut Vegetables Evenly
Try to cut potatoes and carrots into similar-sized pieces. This helps them cook more evenly.
Don't Rush the Simmer
Stew is not a dish that needs constant stirring.Keep the heat moderate and allow the ingredients to cook gently.
Taste as You Go
Seasoning can change as the liquid reduces.Taste toward the end and adjust before serving.
Use What You Have
Don't worry if you don't have every vegetable listed.One-pot stew is naturally flexible. You can adapt it to what's already available in your refrigerator or pantry.
Why This Recipe Is Perfect for Busy Nights
After a long day, dinner should not feel like another major project. That's what makes this style of chicken stew so appealing. You prepare the ingredients, brown the chicken, build the vegetable base, add the broth, and let everything simmer together. While the stew cooks, you're free to do other things. And when dinner is ready, you have a warm, satisfying meal with only one main cooking pot to clean. It's practical without feeling boring.
Final Thoughts
A cozy chicken stew is proof that a good dinner doesn't have to be complicated. With a few basic ingredients and one pot, you can create a meal that's warm, filling, flavorful, and perfect for a busy evening. The combination of tender chicken, potatoes, carrots, onions, herbs, and savory broth creates the kind of comforting meal that works especially well when you want something homemade without spending hours in the kitchen.Keep the recipe flexible, use the vegetables you already have, and don't be afraid to adjust the seasoning to your taste. Most importantly, enjoy the process.Sometimes the best weeknight dinners are the ones that require the least fuss. One pot, simple ingredients, minimal cleanup, and a warm bowl of comfort — exactly what a busy night needs.

Rolled oats generally give homemade granola a better texture and more satisfying crunch. If you're using large nuts, chop them into smaller pieces so they distribute more evenly throughout the mixture.
Step 2: Make the Sweet Mixture
In a small bowl, mix together the honey or maple syrup, oil, and vanilla. If your honey is very thick, warming it slightly can make it easier to mix.The sweetener doesn't just add sweetness. It also helps the granola develop that beautiful golden color as it bakes. You can adjust the amount depending on your preference.Want less-sweet granola?Use slightly less sweetener.Want something closer to a dessert-style granola?Add a little more.
Step 3: Combine Everything
Pour the wet mixture over the oats and nuts. Now comes an important step:Mix thoroughly.Every oat should have at least a light coating of the sweetener and oil mixture.Use a large spoon or spatula and keep stirring until there are no obviously dry patches.Don't worry if the mixture looks slightly sticky. That's exactly what you want.
Step 4: Spread It Out Properly
Line a large baking sheet with parchment paper.Pour your granola mixture onto the sheet and spread it into an even layer. If you want large crunchy clusters, press the mixture down firmly with the back of a spatula. If you prefer loose, crumbly granola, spread it out more loosely. This small step makes a surprisingly big difference in the final texture.
Step 5: Bake Low and Slow
Bake the granola at 160°C / 325°F for roughly 25–35 minutes. But don't walk away completely.Granola can go from beautifully golden to burnt surprisingly quickly. After about 15 minutes, gently stir it if you want evenly toasted granola. If you're trying to create large clusters, avoid stirring too much.Watch the color rather than relying only on the clock. You're looking for a light golden brown appearance. It may still feel slightly soft when you remove it from the oven. That's normal.
Step 6: Let It Cool Completely
This might be the hardest part.Don't immediately start eating it.As granola cools, it becomes crispier. If you want those delicious crunchy clusters, let the granola cool completely on the baking sheet before breaking it apart.Once it's cool, add ingredients that you don't want to bake. This is the perfect time to mix in:

Chocolate chips

Dried fruit

Coconut flakes

Freeze-dried fruit

Adding these after baking helps prevent them from becoming overly hard or burnt.
The Secret to Extra-Crunchy Granola
If crunchy clusters are your goal, there are three simple tricks.
1. Don't make the mixture too dry
The sweetener and oil help bind everything together.
2. Press it down
Firmly pressing the mixture onto the baking sheet encourages clusters to form.
3. Don't stir constantly
Too much stirring breaks up the clusters before they have a chance to set.Once the granola is completely cool, break it into whatever size pieces you like.
How to Customize Your Granola
One basic recipe can become dozens of different versions.
For a classic combination
Try almonds, cinnamon, honey, and raisins.
For a tropical version
Use coconut flakes, cashews, and dried pineapple.
For chocolate lovers
Add cocoa powder to the dry mixture and stir in chocolate chips after baking.
For a fall-inspired version
Use pecans, cinnamon, a little nutmeg, and maple syrup.
For a nut-free version
Replace the nuts with pumpkin seeds, sunflower seeds, and extra oats.Don't be afraid to experiment.Granola is one of those recipes where small changes rarely ruin the entire batch.
Easy Ways to Eat Homemade Granola
You don't have to eat it from a bowl with milk.Try it:With yogurt:Layer yogurt, granola, and fresh fruit for an easy breakfast. With fresh berries:Add strawberries, blueberries, or bananas for a simple snack.Over smoothie bowls:Granola adds much-needed crunch to a creamy smoothie bowl.As a snack:Grab a handful when you want something crunchy. With warm milk:Treat it like a more interesting version of cereal.Over ice cream:A little homemade granola can turn plain ice cream into a surprisingly good dessert.
How to Store It
Once completely cool, transfer the granola to an airtight container.Keep it somewhere cool and dry.Avoid storing it while it's still warm because trapped moisture can make it lose its crunch. If you've made a large batch, divide it into smaller containers so you don't repeatedly expose the entire batch to air.
The Best Part: Make It Yours
The biggest advantage of homemade granola isn't that it's necessarily healthier or cheaper in every situation. It's that you control the recipe. You can make it sweeter or less sweet. Add more nuts. Skip the coconut. Use honey instead of maple syrup. Make huge crunchy clusters or tiny crispy pieces.Once you've made it a few times, you probably won't even need to measure everything precisely. You'll simply look at what's in your pantry and think:"That would probably make excellent granola."And that's when you've officially mastered it.
Final Thought
Homemade granola is one of those recipes that looks much more complicated than it actually is.Mix your ingredients, spread them onto a baking sheet, bake until golden, let everything cool, and enjoy. The result is crunchy, fragrant, customizable granola that tastes fresh because you just made it fresh. And once you smell that first batch coming out of the oven, the store-bought stuff may have a hard time competing. 🥣✨

alt="Image">A good weeknight pasta needs to accomplish a few things. It should be:

Fast

Filling

Affordable

Easy to customize

Made with everyday ingredients

Delicious enough to make again

This recipe checks all the boxes. The basic combination is:Pasta + garlic + tomatoes + Parmesan + pasta water + seasoningThat's really all you need for the foundation. The pasta water is especially important. It contains starch released from the pasta, which helps bring the sauce together and gives it a smoother, more cohesive texture.
The Ingredients
For approximately 2–3 servings, you'll need:
Pasta
About 200–250 g of spaghetti, linguine, penne, or whatever shape you have.
Olive oil
Around 2 tablespoons.
Garlic
3–4 cloves, finely chopped or thinly sliced.
Tomatoes
About 1 cup of cherry tomatoes, halved. You can substitute canned tomatoes if that's what you have.
Parmesan
Around ½ cup, freshly grated if possible.
Red pepper flakes
½ teaspoon, or more if you like heat.
Salt and black pepper
To taste.
Pasta water
About ½–1 cup reserved before draining.
Optional additions
You can also add:

Fresh basil

Baby spinach

Mushrooms

Zucchini

Cooked chicken

Shrimp

Olives

Sun-dried tomatoes

Mozzarella

Lemon zest

The basic recipe works beautifully without them.
Step 1: Get the Pasta Cooking
Bring a large pot of salted water to a boil.Add your pasta and cook according to the package instructions. While the pasta cooks, don't just stand around waiting. This is where the 20-minute strategy comes from.Prepare the sauce while the pasta cooks. Before draining the pasta, scoop out at least ½ cup of pasta water.Don't skip this. It's one of the easiest ways to improve a simple pasta sauce.
Step 2: Start the Garlic and Tomato Sauce
While the pasta is cooking, heat olive oil in a large skillet over medium heat.Add the garlic.Cook for about 30–60 seconds, stirring frequently. You want the garlic to become fragrant without turning dark and bitter.Add the halved cherry tomatoes.Season with salt, black pepper, and red pepper flakes.Cook for several minutes until the tomatoes begin to soften and release their juices. If you're using canned tomatoes, let them simmer for a few minutes instead.
Step 3: Bring Everything Together
<img and coats the pasta.Don't dump all the water in at once.Start with a small amount and add more as needed. Then turn the heat down or remove the skillet from the heat.Add the Parmesan and toss again. The cheese should melt into the sauce rather than sitting in a pile at the bottom of the pan.
Step 4: Finish It Properly
Now taste the pasta. This is the moment when a decent pasta becomes a really good one.Ask:Does it need more salt?More black pepper?More Parmesan?More chili?A little acidity?A squeeze of fresh lemon juice can brighten the entire dish.Add fresh basil if you have it.Finish with another drizzle of olive oil and a little extra Parmesan. That's it.Dinner is ready.
The 20-Minute Timeline
Here's how to actually get this dinner on the table quickly.
0–3 minutes
Boil the pasta water and chop your garlic and tomatoes.
3–5 minutes
Add the pasta to the boiling water.Start the sauce in a skillet.
5–15 minutes
Let the pasta cook while the tomatoes soften and the garlic becomes fragrant.
15–18 minutes
Transfer pasta into the skillet and add pasta water.Toss until glossy.
18–20 minutes
Add Parmesan, adjust seasoning, garnish, and serve. The exact timing will depend on your pasta and equipment, but the principle is simple:Cook the pasta and sauce at the same time.
Easy Ways to Change It
<img of cream cheese for extra richness.
Add greens
Throw in a handful of spinach during the final few minutes. It will wilt quickly.
Add protein
Use leftover roasted chicken, cooked shrimp, or another protein you already have.
Make it spicy
Increase the red pepper flakes or add a little chili oil.
Make it lemony
Add lemon zest and a squeeze of lemon juice at the end.
Add vegetables
Mushrooms, zucchini, bell peppers, broccoli, and peas can all work. This is especially useful when you're trying to use up vegetables before they go bad.
The Secret to Better Weeknight Pasta
The biggest mistake people make with quick pasta is treating the sauce and pasta as two completely separate things.Instead, finish the pasta in the sauce. When the cooked pasta goes into the skillet, it gets coated with the sauce while the starch from the pasta water helps everything come together. You aren't just putting sauce on top of pasta. You're building the sauce around the pasta. That small change makes a big difference.
Common Mistakes to Avoid

Don't overcook the garlic
Burnt garlic can make the entire dish bitter.Keep the heat moderate.
Don't forget pasta water
Regular tap water won't have the same starchy quality.
Don't add Parmesan over extremely high heat
Very high heat can cause cheese to clump rather than blend smoothly.
Don't drown the pasta in sauce
You want the sauce to coat the pasta rather than leave it swimming in liquid.
Don't skip tasting
Seasoning is what makes simple food taste complete.
What to Serve With It
<img
